Ever since I was a little girl, I have been obsessed with sugar. My earliest memories involve playing in the kitchen with a little baking set, wearing a colourful apron with my name cutting out cookie dough into shapes. I loved coming home after school to the smell of something magical cooking in the oven. My Mom was my first baking teacher, showing me how to make cookies, knead the yummiest pizza dough and bake sky high biscuits.

I love to bake and feel like I am at a creative peak when I’m working in my kitchen dancing to music as the eggs, sugar and butter cream together in my mixer. I read cookbooks like novels and have found like-minded friends who also hunt for delicious sweets. I only cook with butter and dream of cupcakes, maple syrup and waffles. I confess I am addicted to chocolate, and have passed the love of sneaking chocolate chips in the pantry onto my son.

As a birthday gift years ago, my husband enrolled me in baking classes. He bought me a cupcake carrier, decorating tools and registration. After completing my first class, I was hooked!  I quickly enrolled in any course I could find.

After the arrival of my first little man, I spent many days on mat leave in the kitchen, making bread, cookies and cakes. My husband would peddle the treats into work the next day for tasting with co-workers.

After a year of dabbling in cakes and baking for friends, I decided to launch Polka Dot Cakes. Over the past five years, I have expanded my business from simple party cakes to more elaborate wedding cake designs; often teaming up with other talented Moms, through the East Coast Mommas Collective.

Recently I traveled to The Bonnie Gordon Cooking School in Toronto, Ontario where I worked with the world renowned Cakestress and Susan Trianos. My experiences at The Bonnie Gordon School were pivotal as I made a personal commitment to refocus my business.  I returned home with new skills that I have incorporated into my new wedding designs. Keep an eye out for wafer paper flowers, edible gold sequin work and multi-tiered wedding cakes this upcoming wedding season.

Currently, I am expecting the next addition to my family, a second little man! I am excited to see what the next year has in store for my family, my business and my sweet teeth!
